This morning I started my day with the usual array of fruit and between meals I snacked on a mix of organic dried cranberries and raw almonds.
For lunch a made a simple favorite: wild tuna with olive oil mayo in lettuce cups and a sliced pluot.
After lunch I snacked on some organic red grapes and started to plan dinner
I decided to make something like Chicken Francese but of course paleo style.
This delicious meal only took 15 minutes
I used:
- thawed chicken tenders
- 1 egg mixed with tbsp water
-2 tbsp olive oil
- 1/4 cup dry white wine
-1/2 cup organic chicken broth
- 4 tbs almond milk
-half a lemon thinly sliced
-salt &peper to taste
1. Prep chicken by dipped in egg/water mixture.
2. Heat 2 tbs olive oil in medium sized pan
3. Cook chicken til golden brown on both sides flipping once.
4. Remove chicken from pan and set aside to keep warm.
5. Place lemon slices in the pan and let cook about 2 minutes to give off there flavor.
6. Add wine and chicken broth and reduce for 5 minutes.
7. Add almond milk and let sauce thicken slightly.
8. Once the sauce reaches desired thickness add chicken back to pan to soak up the sauce.
9. Add salt and pepper to taste!
I served it with butternut squash cooked in the microwave (shame on me but I was pressed for time) and topped with a little local honey.
For dessert I threw a banana, frozen peaches and almond milk in the blender to make a fruit smoothie!
