This morning I was in desperate for something other than fruit. My friend told me about these pancakes and I was very excited to try them.
They were so easy to make and tasted fabulous!
To make one pancake you only need:
Simply combine all the ingredients and cook them in a pan just as you would a pancake! It is really that easy! I was so happy to eat something so tasty for breakfast.

- one mashed ripe banana
- one tablespoon almond butter
- one egg
- and a little bit of coconut oil to coat the pan

After breakfast, I snacked on a pluot and sipped white peony ice tea at one of my favorite little reno coffee shops, Walden's.
Tonight I had an early dinner or so you could call it "linner". I ran to the store and grabbed a few things to spice up the tilapia I had thawed out of the freezer.

- 4 tilapia filets
- 1 mango
- 1 tomato from the vine
- 1/2 of the serrano pepper
- 2 Tbs Tequila lime seasoning (I got mine at whole foods)
- 2 cloves of garlic
- 1/2 lemon
First, I preheated the oven to 400 degrees.
Next, I sprayed olive oil on a baking sheet covered in tin foil. I then seasoned the tilapia and put it in the oven for ten minutes. I cubed the mango and tomato, pressed the garlic, and added a splash of fresh lemon juice. Lastly I cut up the pepper very small so it blended well with the rest of the ingredients and threw the whole thing in the refrigerator.
After exactly 10 minutes the fish was baked to perfection and the salsa was chilled. I served the tilapia with yesterdays leftover salad and it was absolutely delightful!
