Day 12 was extremely hectic so it was a serious leftover day! That's the good thing about making all these wonderful dinners, I always have leftovers.
Day 13 I decided to get more creative for breakfast and I made a delightful omelet!
All you need is
One tomato
One small yellow onion
A handful if white mushrooms
A handful of organic spinach
4 eggs
Fresh basil
Salt & pepper to taste
Simply sauté all the veggies and set aside.
Next scramble the eggs in a bowl and add salt, pepper, and basil. Cook the egg like a pancake, flip, and add the veggies back in!
For lunch I snacked on fruit and made an early dinner.
For dinner I made homemade guacamole and ground turkey tacos wrapped in romaine lettuce.
For the guacamole I used:
2 ripe avacados
Half of a tomato
1/2 tablespoon salt
1/2 tablespoon cayanne pepper
Half a red onion
1 pressed garlic clove
1 tablespoon chopped cilantro
Half a squeezed lemon
Simply mash the avacados, chop up all the ingredients, mix well and refrigerate for 10 minutes before enjoying! We dipped sliced cucumbers in the guacamole to be paleo-friendly!
For the tacos I used:
1 pound ground turkey
1 packet trader joes taco seasoning
Half a red onion, chopped
3/4 can organic tomato sauce
2 cloves pressed garlic
2 tablespoons olive oil
Salt & pepper to taste
Simply sauté the onions and garlic in oil. Add turkey and brown the first side, add tomato sauce, seasoning, and mix well. Cook turkey until the sauce has evaporated and turkey is cooked thoroughly. Serve turkey meat in lettuce boats and enjoy.
For dessert I had coconut icecream yum!
