Due to the fact that I woke up late today, I skipped breakfast and went straight to lunch! I enjoyed a fresh arugula salad with beets,hard boiled egg, and blackened snapper at Campo restaurant downtown. I fought so hard and resisted the fresh baked focaccia bread (it looked so delicious)! Later in the afternoon I had a snack from our local coop of dried nectarines and mangos.
For dinner we went to a potluck barbecue which was really difficult, but we stayed true to our diet (refusing potatoes au gratin was torturous)! Instead we are grilled chicken, fruit salad, guacamole with cucumbers, and a side salad. Afterwards I was craving something sweet so I got creative and found a recipe for paleo chocolate chip cookies!
These were delicious and not difficult to make, but buying almond flour, grade b maple syrup, and coconut oil is not cheap! Here's the whole recipe:
1 tsp Vanilla extract
1 1/2 cup semisweet chocolate chips
1/2 cup grade b maple syrup
1 tsp salt
1 tsp baking soda
3 cups blanched almond flour
2 eggs
1/2 cup unrefined coconut oil (buy it at trader joes)
- Preheat oven to 375°F.
- In a medium-sized mixing bowl combine dry ingredients.
- In a small mixing bowl beat eggs, maple syrup, and vanilla extract with a hand mixer.
- Pour wet ingredients into dry and beat with hand mixer until combined.
- Melt coconut oil, pour into batter, and continue to blend until combined.
- Stir in chocolate chips.
- On a parchment-lined baking sheet, drop balls of cookie dough, about a tablespoon in size.
- Bake for 15 minutes.
- Let cool and serve with coconut milk.
They are very tasty and satisfying for the hungry paleo Cookie Monster like myself!
