Tonight I decided to scavenge around my refrigerator to see what I had and here is what I came up with....so it seemed like a good idea to make Paleo Turkey Meatballs!
After snooping around on a few different websites and checking out different ideas for turkey meatballs, I decided to make my own recipe by collaborating different ingredients and they turned out quite delicious! I used:
- 1lb ground turkey meat (only 2.99 at Trader Joes!)
- a handfull of white mushrooms
- a handfull of organic baby carrots
- 6 mini peppers
- 6 fresh basil leaves
- 5 cloves of garlic
- 2 organic eggs (only one is shown in the picture but I added another)
- 2 organic onions (from Walmart!)
- about 2 Tbl spoons of italian seasoning or my favorite 21 Seasoning Salute from Trader Joes
- Salt & Pepper as desired
- 2 Tbl spoons of Organic Golden Milled Flax Seed
- 1 Jar organic tomato basil marinara from Trader Joes

The first thing I did was preheat the oven to 350 degrees and break out my mini food processor (which definitely made the meal much easier to prepare). If you don't have one of these I definitely recommend picking one up ( they are great for making pesto too). I took each ingredient and finely chopped it using the food processor to ensure the veggies would be hidden in the meat and not in big chunks. This took about 10 minutes with my food processor and probably would have taken at least 20 done by hand!

Next I threw all of the veggies in a bowl and mixed in 2 eggs and 2 Tbl spoons of Organic Golden Milled Flax Seed.
After making sure all of the ingredients were thoroughly mixed, I added my seasonings and formed the mixture into balls as you would normal meatballs. The consistency was not as firm as I had hoped for so maybe in the future I would only use one egg, but seeing as these turned out very moist and delicious it doesn't really matter and it is up to your discretion. Make sure to spray olive oil on the pan before placing your meatballs accordingly.

I was able to make about 17 meatballs on two cookie sheets and baked them at 350 for 40 minutes. While cooking, the fat melted off leaving a residue on the pan that looked a little burnt but was really easy to clean off, so don't be alarmed if it happens to you. After the meatballs were ready I simmered the tomato sauce until warm and submersed the meatballs. Once the sauce started to bubble I served the meatballs with sautéed green beans.
This meal is Boyfriend approved and even little Rue was happy because she caught a falling string bean.
