Thanks to the paleo diet I have found a deep appreciation for this beta-carotene blasted veggie.
I made these with all organic ingredients tonight, and I used almond flour to make them paleo! For dinner tonight I served them along with organic turkey patties.
Overall I spent an hour on dinner including prep and everything turned out fabulous.
I might suggest cranking up the heat on the last 15 minutes for the fritters to make them crunchier.
