Today was definitely difficult: 5 hours of school, 4 boring professors, bagels and candy bars tempting me everywhere, and expensive textbooks.
For breakfast I had my specialty: pre-sliced fruit!
For lunch I brought leftover chicken, almonds and organic craisins, and a pluot.
By the time I got home, I had no desire to cook but lucky for me I foresaw this day being long and had a freezer meal thawed out and ready to be thrown in a pan. In my freezer meal I had prepared:
1lb chopped sirloin seasoned in thyme, oregano, and olive oil
1 chopped red bell pepper
1 chopped orange bell pepper
1 chopped onion
1/2 lb sliced white mushrooms.
By the time I got home it was completely thawed, so I put some olive oil in the pan and cooked the meal adding salt and pepper to taste.
So easy and very tasty.
Today I did not enjoy being paleo. I definitely was craving all sorts of grains and dairy products.
